Molly's Incredible Rolls

Molly's Incredible Rolls (From Lindsay)

My aunt makes the most amazing rolls. We have them at every bridal and baby shower event... Good for sandwiches, with soups, eaten plain, and any other way you could think of.

In a mixer, combine (looks like cake batter):

5 c HOT water
1 T salt
1/2 c honey
1/2 c instant potato flakes
3/4 c oil
3 c flour

Then add:
3 T SAF Instant yeast
10 c flour (one cup at a time, until dough forms a ball and sides of mixer are clean.)

Knead 1 minute. (Power 2).
Stop and add 1 more cup flour.
Knead 3-4 minutes more.

Grease cookie sheet.
Separate dough into 4 equal pieces.
Roll out to a 14" circle on a buttered counter.
Using a pizza cutter, cut dough into 12 triangles. Grease hands, and roll each triangle from the wide end to the point. Place on sheet 3 across and 8 down so you get two dozen in each pan. (The closeness makes them fluffy.)

Bake 15 minutes at 150 degrees. (While you roll the next pan.)
Then turn oven to 350 and bake 15-20 min. or until tops and bottoms are light brown and crispy.

Yields: 4 doz rolls.

Can use same recipe to make whole wheat, 1/2 whole wheat and 1/2 white flour rolls, cinnamon rolls, breadsticks, pizza crust, or bread loaves.

For cinnamon rolls:

Roll out dough. Spread butter on the dough. Sprinkle cinnamon sugar, roll, and slice into rolls 3/4" thick.

For Breadsticks:

Press dough into the cookie sheet with buttered hands, and cut into strips. Brush with melted butter and sprinkle with Parmesan cheese.

For bread loaves:
Add 1/2 c oil. Makes 5 loaves.
